Joshua & Victoria Overington

Joshua, Chef Patron

Joshua grew up in a market town just outside York, spending summers in France and Europe, immersed in French restaurant culture with his family of food enthusiasts from an early age.

After flirting with a career in music, Joshua embarked on a gap year that brought him to Sydney, where he took a job at a small restaurant and reignited his fascination with food, which quickly became a passion and soon thereafter, a resolute career ambition moving to Paris to gain formal training at the legendary Le Cordon Bleu.

Shining a light on the highest quality produce in the local area and beyond, Joshua’s cooking draws on the area’s rich history with a menu that puts his elegant spin on traditional Yorkshire cooking.

Victoria, General Manager & Sommelier

Victoria was raised on a farm in rural Dorset, where her family reared its own produce, sparking her early interest in cultivating a relationship between food and the surrounding land.

Working in hospitality throughout her education, Victoria then gained a degree in nursing before taking a gap year to work as a chalet host in the Alps where she met Joshua for the first time.

After successfully obtaining her WSET Level 3 and the Introductory Certificate for the Court of Master Sommeliers, Victoria has curated an impressive wine selection for the restaurant to complement Joshua’s menus.

In March 2026, Victoria’s wine list was nominated for Best Short Wine List in the UK 2026 by the Star Wine List awards.

Jamie Keeble

Head Chef

Jamie Keeble’s love of food began in childhood, cooking and baking alongside his mother. That early curiosity soon developed, with Jamie giving cookery a try at college before securing his first kitchen role at Sheffield Wednesday F.C.

Taking the plunge to leave home and enter the world of fine dining, Jamie took on a role at Lords of the Manor, a Michelin-starred hotel restaurant in the Cotswolds

There, he learned the art of technical cookery and became hooked. Jamie continued to refine his craft at acclaimed restaurant with rooms Ynyshir in Wales, where his style and ambition continued to evolve.

Seeking a new challenge, Jamie joined the opening team of Mýse in 2023 alongside founders Joshua and Victoria Overington.

In February 2026, Jamie was spotlighted as a future star in hospitality, selected for the National Restaurant Awards Rising Stars Class of 2026 and winning the Rising Star award in the chef category.

Victoria Williams

Restaurant Manager

A York native, Victoria’s childhood was largely influenced by her parent’s passion for growing and producing all their own vegetables and fruit for the family. A career in hospitality beckoned, progressing into a junior management role in York’s Principle Hotel, learning the art of guest relations, floor management and logistical skills.

Pursuing a new direction in fine-dining, Victoria joined Joshua and Victoria Overington at their debut York restaurant Le Cochon Aveugle as Assistant Manager, refining her professional service and hospitality management.

Moving from York to Hovingham to open Mýse in 2023 alongside founders Joshua and Victoria, Victoria joined the opening team as Restaurant Manager, looking after guest relations, service and leading our front of house team.
